So how do you make these famous French fries? Here are the instructions, step-by-step:


Required Ingredients:


2 Idaho russet potatoes
1/4 cup corn syrup
1 1/2 cups water
6 cups peanut oil
1/4 cup beef lard
2 teaspoons salt, to taste
1/4 teaspoon beef bouillon granules

  • Julienne the peeled potatoes into about 4-inch-6-inch shoestring fries, about 1/4" thick and 1/4" wide.
  • Add the sugar water solution to a large bowl along with the corn syrup, and mix thoroughly until well combined. Add the fries and refrigerate for 30-40 minutes.
  • As the French fries soakheat peanut oil in a deep fryer until it reaches 375°F in a heavy-bottomed pot or deep fryer.
  • Once the French fries have been removed from sugar water and drained, add them to a pan with oil and partially fry for one to one and half minutes until just golden brown. Put them in the refrigerator for 10 to 15 minutes after they've been taken out of the fryer.
  • When the fries are coolstir the beef fat into the peanut oil. Heat the oil to 400oFCarefully add the French fries back into the beef fat oil. Drain the French fries and place them in a large bowlFry for about five to seven minutes, until they are golden brown.
  • Add generous amounts of salt and toss fries until well coated. Now you all Done and the Fries are Ready to Serve.
